Banana Nut Muffins

Muffins cooling on racks.
INGREDIENTS:

WET:
3 Ripe Bananas
¾ C white sugar
¾ C brown sugar
1 Lg egg
⅓ Cup oil

DRY:
1 ½ Cup bread flour
1 tsp baking powder
1tsp baking soda
½ tsp salt
½ tsp cinnamon
¾ Cup chopped nuts

TOPPING (optional): Appx 1 Tbsp butter melted, 1 Tbsp brown sugar, ⅓ Cup chopped nuts.
Stir together, sprinkle on top of raw batter BEFORE baking.

STEPS:
  1. Mash Bananas
  2. Mix in SUGARS & EGG with a wooden spoon.
  3. Add Oil.

  4. In a seperate bowl mix: Dry ingredients & nuts.
  5. Add dry ingredients to wet ingredients, fold with wooden spoon just until flour disappears, over mixing with result in sunken muffins!
  6. Fill muffin liners – I over fill them to get the coffeeshop look. Bake 20-23 mins @ 350° ( If muffins fall, set oven to 400° for the first 4-5 mins then drop temp to 350°).
